Ingredients:
For the Chicken Lollipop:
12 chicken lollipop pieces (drumettes or winglets)
Oil for deep frying
For the First Marination:
1 tbsp ginger-garlic paste
1 tbsp lemon juice
1 tsp salt
1 tsp Kashmiri red chili powder
For the Second Marination:
2 tbsp gram flour (besan)
2 tbsp cornflour
2 tbsp all-purpose flour (Maida)
1 egg
1 tbsp thick curd
1 tbsp ginger-garlic paste
1 tsp garam masala
1 tsp chaat masala
1 tsp Kashmiri red chili powder
½ tsp turmeric powder
1 tbsp kasuri methi (dried fenugreek leaves)
Salt to taste
Water as needed (for batter consistency)
For Punjabi-style Tossing Sauce:
2 tbsp oil
1 tbsp butter
1 tbsp ginger (finely chopped)
1 tbsp garlic (finely chopped)
2 green chilies (slit)
1 tbsp red chili sauce
1 tbsp tomato ketchup
1 tbsp soy sauce
1 tsp vinegar
1 tsp honey
1 tbsp fresh coriander (chopped)
1 tbsp spring onion greens (chopped)
Instructions:
Step 1: Marinate the Chicken
Clean and pat dry the chicken lollipop pieces.
Mix all ingredients for the first marination and coat the chicken well. Let it rest for 15-20 minutes.
In a bowl, mix all ingredients for the second marination into a smooth, thick batter. Add little water if needed.
Coat the marinated chicken lollipops in this batter and let it rest for at least 2 hours for better flavour.
Step 2: Deep Fry the Chicken
Heat oil in a deep pan or kadai over medium heat.
Fry the lollipops in batches until golden brown and crispy.
Remove and drain excess oil on paper towels.
Step 3: Prepare the Punjabi-style Sauce
In a pan, heat oil and butter. Add chopped ginger, garlic, and green chilies. Sauté until aromatic.
Add red chili sauce, ketchup, soy sauce, vinegar, and honey. Mix well.
Toss in the fried chicken lollipops and coat them evenly with the sauce.
Garnish with fresh coriander and spring onions.
