Vada Pav is Mumbai’s favourite street food, and today, I’m going to show you how to make the perfect Vada Pav with spicy chutneys, just like the ones from the streets of Mumbai! So, get ready to bring that authentic street-style flavour to your kitchen.
Vada Pav, often called the "Indian burger," is a beloved street food from Mumbai. It consists of a spicy potato fritter (Vada) sandwiched between a soft pav (bread roll), served with flavourful chutneys. Follow this authentic recipe to make the perfect Mumbai-style Vada Pav at home!
Ingredients
For the Vada (Potato Fritter)
- 3 large potatoes (boiled & mashed)
- 2 green chilies (finely chopped)
- 4-5 garlic cloves (crushed)
- 1/2 inch ginger (grated)
- 1/2 teaspoon turmeric powder
- 1 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 8-10 curry leaves (chopped)
- 1 tablespoon coriander leaves (chopped)
- Salt to taste
- 1 tablespoon oil
- For the Batter
- 1 cup besan (gram flour)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- A pinch of baking soda
- Salt to taste
- Water as needed
For the Dry Garlic Chutney
- 3 tablespoons dry coconut (grated)
- 2 tablespoons peanuts
- 1 tablespoon sesame seeds
- 4-5 garlic cloves
- 1 teaspoon red chili powder
- Salt to taste
For the Green Chutney
- 1/2 cup coriander leaves
- 1/4 cup mint leaves
- 1 green chili
- 2 garlic cloves
- 1/2 teaspoon cumin powder
- Salt to taste
- Lemon juice (1 teaspoon)
Other Ingredients
- Pav (soft bread rolls)
- Oil for deep frying
- Green chilies (fried for serving)
Method
Step 1: Make the Potato Filling
Heat 1 tablespoon oil in a pan. Add mustard seeds and let them splutter.
Add cumin seeds, curry leaves, and chopped green chilies. Sauté for a few seconds.
Add crushed garlic and grated ginger, sauté until fragrant.
Mix in turmeric powder and salt, followed by mashed potatoes. Stir well.
Add chopped coriander leaves, mix again, and let the mixture cool.
Once cooled, shape small round balls from the mixture.
Step 2: Prepare the Batter
In a bowl, mix besan, turmeric, red chili powder, baking soda, and salt.
Add water gradually to make a smooth, thick batter.
Step 3: Time to Fry the Vada
Heat oil in a deep pan for frying.
Dip each potato ball into the batter, ensuring it's well coated.
Fry on medium heat until golden and crispy. Drain on paper towels.
Step 4: Let’s Make the Famous Dry Garlic Chutney
Dry roast grated coconut, peanuts, sesame seeds, and garlic separately.
Grind them together with red chili powder and salt to form a coarse powder.
Step 5: Quick & Tasty Green Chutney
Blend coriander, mint, green chili, garlic, cumin powder, salt, and lemon juice with a little water.
Step 6: Assemble the Vada Pav
Slice the pav in half, but don’t cut through completely.
Spread dry garlic chutney on one side and green chutney on the other.
Place a hot Vada inside the pav.
Serve with fried green chilies for that authentic Mumbai street-style experience!
