Ingredients

- 2 tbsp raw papaya paste (for tenderness)
- 2 tbsp gram flour (besan), roasted
- 1 tbsp ghee (clarified butter)

- 1 tbsp ginger-garlic paste
- 1 tsp red chili powder
- 1/2 tsp turmeric powder
- 1/2 tsp black pepper powder
- 1 tsp garam masala
- 1/2 tsp shahi jeera (caraway seeds), roasted & ground
- 1 tsp coriander powder
- 1/2 tsp cumin powder
- 1/2 tsp green cardamom powder
- 1/2 tsp nutmeg powder
- 1/2 tsp mace powder
- 1 tbsp yogurt
- 1 tbsp lemon juice
- Salt to taste
- For Cooking:
- 2 tbsp ghee or oil
- 2 tbsp chopped coriander leaves
- 2 tbsp finely chopped green chilies
Instructions
Step 1: Prepare the Mince
Take the mutton mince in a large mixing bowl.
Add raw papaya paste (this helps make the kebabs tender).
Add all the spices, fried onion paste, roasted gram flour, ginger-garlic paste, lemon juice, and yogurt.
Mix everything well and let it marinate for at least 4–6 hours (or overnight for best results).
Step 2: Make the KebabsTake the marinated mince and mix it again to ensure even flavoring.Add chopped green chilies and coriander leaves for extra aroma.Take small portions and shape them into round patties (flatten them slightly).
