CHOLE BHATURE RECIPE
Chole Bhature is a classic North Indian dish that combines spicy, tangy chickpea curry (chole) with fluffy deep-fried bread (bhature). It's the perfect indulgent meal for a weekend brunch or a special treat. Follow this simple, restaurant-style recipe to make it at home!
Ingredients
For Chole (Chickpea Curry)
- 1 cup dried chickpeas (chhola) ( drain it and then rinse)
- 2 tbsp oil or ghee
- 1 large onion, finely chopped
- 2 tomatoes, pureed
- 1 tbsp ginger-garlic paste
- 1 green chili, slit (optional)
- 1 tsp cumin seeds
- ½ tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala
- 1 tsp amchur (dry mango powder) or juice of ½ lemon
- 1 black tea bag (optional, for color)
- Salt to taste
- 2 cups water
- Fresh coriander for garnish
- For Bhature (Fried Bread)
- 2 cups all-purpose flour (maida)
- ¼ cup semolina (sooji) for crispiness
- ½ cup yogurt
- ½ tsp baking soda
- ½ tsp salt
- 1 tsp sugar
- 1 tbsp oil
- Water as needed
- Oil for deep frying
Instructions
Step 1:
Prepare the Chole (Chickpea Curry)
Soak the chickpeas overnight (8 hours) in water. Drain and rinse. If using canned chickpeas, skip this step.
Pressure cook the chickpeas with 2 cups of water, salt, and a tea bag (optional) for 4-5 whistles until soft. Discard the tea bag.
heat oil in a pan, then add some cumin seeds, and splutter. now we have to add chopped onions and sauté as long as they get golden brown.
Stir in ginger-garlic paste and green chili. Sauté for a minute until fragrant.
After that we need to add the tomato puree and cook until the oil separates.
Mix in all the spices—turmeric, red chili, coriander, cumin, garam masala, and amchur. Cook for a minute.
Add the cooked chickpeas and mash some for a thicker consistency. Pour in water as needed.
Simmer for 10-15 minutes until the flavours blend beautifully. Garnish with fresh coriander.
Step 2:
Prepare the Bhature (Fluffy Fried Bread)
In a bowl, mix flour, semolina, salt, sugar, and baking soda.
Add yogurt and oil, then gradually add water and knead into a soft dough.
Cover it with a cloth and let it rest for 2-3 hours.
Heat oil in a deep pan for frying.
Divide the dough into equal portions and roll each into a round 5-6 inch disc.
Carefully drop into hot oil and fry until puffy and golden brown on both sides.
Drain on paper towels.
Serving Suggestions
Serve hot chole with fluffy bhature, along with pickle, sliced onions, and a wedge of lemon.
Pair with a chilled glass of sweet lassi for the ultimate Punjabi experience!
