Jeera rice is one of the most ordered rice dishes in Indian restaurants. It is pretty much eaten with every other popular dish like dal makhani, butter chicken, paneer butter masala, dum aloo, egg curry etc. It just goes so well with any sides like curries, dal or even with stew.

Is jeera rice good for health?

What is jeera rice variety?

Jeera Mashino Rice is a special variety of rice grown in the rice paddy fields of West Bengal in India. The grain size is very small similar to the size of cumin seeds. The taste and aroma of Jeera Mashino Rice are very well appreciated in neighbouring countries such as Nepal and Bangladesh.



Clean and thoroughly wash the rice. Soak them in water for half an hour.

Strain out the excess water from rice

Heat some ghee in a wok or any other cookware and splutter cumin seeds first.

Then add the following whole spices as well – cinnamon stick, black pepper, clove and green cardamom. Saute for a few more minutes until fragrant.

Now add the soaked rice and stir well for 2 minutes. To it then add 2 cups of water, followed by some salt and lemon juice.

Mix everything well and let the rice simmers for 5 minutes and check later. Check later.

Cover the rice again and cook for 5 more minutes. Check again later. The rice is still not cooked through so let them simmer for 3 to 4 more minutes.

Check the rice and this time you’ll see puffed rice with no water in the vessel.

Rice is cooked through and ready to be served.

Garnish with some green coriander sprigs. Serve with steaming hot sumptuous curries, with a wide assortment of pickle wedges and relish eating.

1 Basmati rice – 1 cup Ghee or oil – 2 to 3 tbsp
2 Green coriander – 2 to 3 tbsp (finely chopped)
3 Cumin seeds – 1 tsp
4 Lemon – 1
 Whole spices
5 brown cardamom-1
6 cloves – 4
7 peppercorns -7 to 8
8 inch cinnamon -1
9 stick Salt – 1 tsp (to taste)

तैयार करने के लिए निर्देश:

1. चावल को साफ और अच्छी तरह धो लें। इन्हें आधे घंटे के लिए पानी में भिगो दें।

2. बाद में चावल से अतिरिक्त पानी निकाल दें।

3. सबसे पहले कढ़ाई में घी डालकर गरम कीजिये और जीरा भून लीजिये.

4. इसके बाद इसमें साबुत मसाले भी डाल दीजिए-दालचीनी, काली मिर्च, लौंग और

छोटी इलायची. सुगंधित होने तक कुछ और मिनट के लिए भूनें।

5.अब भीगे हुए चावल डालें और 2 मिनट तक अच्छी तरह चलाएं। इसके बाद इसमें 2 कप पानी, नमक और नींबू का रस डालकर मिलाएं।

6.सब कुछ अच्छी तरह मिला लें और चावल को 5 मिनट तक उबलने दें और बाद में चैक करें। बाद में जांचें।

7.चावल को फिर से ढककर 5 मिनिट और पकाइए। बाद में दोबारा जांचें। चावल अभी भी नहीं पके हैं इसलिए उन्हें 3 से 4 मिनट के लिए और उबलने दें।

8. चावल को चैक कीजिए, इस बार आप देखेंगे कि फूला हुआ चावल बर्तन में पानी नहीं है।

9. चावल पक कर तैयार है परोसने के लिए. परोसने के लिए:

11. गरमागरम गरमा गरम करी के साथ, अचार के वेजेज के साथ परोसिये और खाइये.
