For Masala   in english 
¼ cup Ghee,

2-3 Green cardamom, 

10-12 Black peppercorns, 

1 ¼ tsp Cumin seeds, 

5 medium-size Onion, slice, 

Salt to taste, 

2 heaped tsp Coriander


2 tsp Degi red chilli powder, 

¼ tsp Asafoetida, 

½ tsp Turmeric powder,  

¼ cup Coriander leaves, 

Little water, 

3 medium-size tomato, roughly chopped

¼कप घी,

2-3 हरी इलायची,

10-12 काली मिर्च,

1 छोटा चम्मच जीरा,

5 मध्यम आकार के प्याज़, स्लाइस,

नमक स्वादअनुसार,

 2 छोटी चम्मच धनिया पाउडर,

2 चम्मच देगी लाल मिर्च पाउडर,

¼छोटा चम्मच हींग,

½ छोटा चम्मच हल्दी पाउडर,

¼ कप धनिया पत्ती,

थोड़ा पानी,

3 मध्यम आकार के टमाटर, 

For Tempering
2-4 tbsp Ghee, 
2 green chillies, chopped, 
1 inch Ginger, chopped, 
2-4 Garlic cloves, chopped, 
4 cups white chana, soaked, 
½ tsp Sugar, 
Salt to taste, 
few fresh tender Fenugreek leaves, chopped, 
1 tsp Degi red chilli powder, 
A pinch of asafoetida,
1 tsp Black pepper powder, 
Prepared Masala, 
2-4 cups Water,  

 For Garnish 

Coriander sprig, 

Pomegranate pearl, 

For Tempering
2-4 tbsp  घी
2  हरी मिर्च
1  अदरक
2-4 लहसुन
4  safed चना
½ tsp  चीनी
 नमक स्वादअनुसार
 छोटी मेथी के पत्ते
1 tsp देगी लाल मिर्च पाउडर
1 tsp काली मिर्च का पाउडर
 तैयार किया हुआ मसाला
2-4 पानी

For Garnish 

Coriander sprig, धनिया पत्ता

Pomegranate pearl, अनार के दाने

step by step recipe for chole masala


For Masala 

  • In a large pot, add ghee once it’s hot, add green cardamom, black peppercorns, cumin seeds and let it splutter well. 
  • Add onion and saute until light pink in colour. 
  • Add salt to taste, coriander powder, degi red chilli powder, asafoetida and turmeric powder saute it well. 
  • Add coriander leaves, little water and cook for 2-4 minutes. 
  • Add tomato and mix everything well. Cook until the tomatoes are softened.
    Once the ghee is separated from the masala. let the masala come to room temperature. 
  • Transfer the masala into the grinder jar and grind it into a smooth paste. Keep it aside for further use.

प्रक्रिया मसाला के लिए

  • एक बड़े बर्तन में घी गरम होने पर उसमें डालें, हरी इलायची, काली मिर्च, जीरा डालें और अच्छी तरह से फूटने दें।
  • प्याज़ डालें और हल्का गुलाबी होने तक भूनें।
  • स्वादानुसार नमक, धनिया पाउडर, लाल मिर्च पाउडर, हींग और हल्दी पाउडर डालकर अच्छी तरह भूनें।
  • हरा धनिया, थोड़ा पानी डालकर 2-4 मिनट तक पकाएं।
  • टमाटर डालें और सब कुछ अच्छी तरह मिलाएँ। टमाटर के नरम होने तक पकाएं। – एक बार मसाले से घी अलग हो जाए.
  • मसाले को कमरे के तापमान पर आने दीजिये.
  • मसाले को ग्राइंडर जार में डालें और पीसकर मुलायम पेस्ट बना लें।
  • इसे आगे उपयोग के लिए अलग रख दें।

  • For Tempering

  • Once it’s done switch off the flame and garnish with coriander sprig, pomegranate pearl.
    Serve hot with puri and salad.
  • तड़के के लिए
    एक बड़े बर्तन में घी गरम होने पर उसमें डालें, हरी मिर्च, अदरक, लहसुन डालकर अच्छी तरह भूनें।
  • safed चना डालें और एक मिनट के लिए भूनें।
  • चीनी, नमक स्वादानुसार डालें और अच्छी तरह से भूनें।
  • इसे ढक्कन से ढककर 5 मिनट तक पकाएं।
  • ताज़ी मेथी, लाल मिर्च पावडर, चुटकी भर हींग, काली मिर्च पावडर डालकर अच्छी तरह मिलाएँ।
  • तैयार मसाला डालकर मध्यम आंच पर भूनें।
  • पानी डालकर अच्छी तरह मिला लें। इसे ढक्कन से ढककर मध्यम आंच पर पकाएं।
  • थोड़े से चने को मैश कर लें, इससे ग्रेवी गाढ़ी होने में मदद मिलती है।
  • एक बार जब यह हो जाए तो गैस बंद कर दें और धनिया की टहनी, अनार के दाने से गार्निश करें।
    पूरी और सलाद के साथ गरमागरम परोसें।
