Rajasthani Laccha Paratha Recipe - One of the best parathas from India

What are Laccha Parathas?

In Rajasthan and Punjab, laccha parathas are a staple breakfast food. They’re like aloo parathas (fried Indian flatbreads) that have more layers—typically 5 to 8—instead of just two or three. Laccha means folded in Hindi and Urdu, so these savory treats have many folds, resulting in layers within each bite.

Introduction: The laccha paratha recipe is a typical paratha of Rajasthan. also u can say it’s most popular in Punjab because the people love to eat paratha with dal makhani. This is made with wheat flour with special efforts put in while rolling out the paratha to form layers within the paratha. It is best accompanied by a gravy or a curry vegetable Laccha paratha is a classic Indian flatbread.

Process:- IN ENGLISH

Making in laccha paratha:- Mix wheat flour and salt in a vessel add little water and make dough Make a soft dough and knit it with your hands for a few minutes. Apply 1/2 teaspoon oil on the dough so that the dough does not dry. Cover the dough with clothes keep it aside for 15 minutes, and then knit it again. To make the paratha you will take a large portion of dough and apply a little dry flour on it and will make the big roti out of it.

Now, 1 to 1.5 teaspoons of ghee mixture will be applied to the whole roti. Add a little wheat flour (as small as one teaspoon) on it and spread it all over the entire roti. Make small layers of this roti as shown in the video. Pull all the layers together with a light hand.

Now grab this long layer of dough from the edge and make it a little longer so that the layers come out well. Now hold on to one side and make a fine finish by making it a perfect circular shape dough and then again press it slightly with hands. In the same way, all the rotis will be made.

Cover all the made dough balls in a cloth and keep it for 5-10 minutes. Now put a little wheat flour on a dough ball started rolling with a light hand and keep it on the hot pan. Once the paratha is a little cooked, flip it over. One on each side – put one teaspoon of ghee and cook it well.

Lachha paratha with lots of layers is ready to eat, serve them hot. with curry or aloo jeera or with u want !!!

Process:- IN HINDI

laccha paratha bannane ke liye :-एक बर्तन में गेहूं का आटा एवं नमक मिक्स कर लेंगे और थोड़ा थोड़ा पानी डाल कर आटा गूँथ लेंगे। • सॉफ्ट आटा गूथेंगे और थोड़ी देर तक हाथ से मथेंगे । 1/2 छोटी चम्मच तेल चारों तरफ लगा लेंगे ताकि आटा सूखे नहीं । • कपडे से ढक कर 15 मिनट के लिए रख लेंगे, और फिर से थोड़ा मथ लेंगे। • अब आटे की एक बड़ी लोई लेंगे और उस पर थोड़ा सूखा आटा लगा कर अच्छे से बड़ी रोटी बेल लेंगे। •

अब पूरी रोटी पर 1 से 1.5 छोटी चम्मच घी wala mixture लगा लगा लेंगे। (घी थोड़ा जमा हुआ लेना है एकदम पिघला हुआ नहीं) • इस पर थोड़ा (एक छोटी चम्मच जितना) सूखा आटा लगा लेंगे और अच्छे से पूरी रोटी पर फैला लेंगे। • इस रोटी की छोटी छोटी परतें वीडियो में दिखाए अनुसार बना लेंगे। सारी परतों को हल्के हाथ से दबाएंगे। •

अब इस लम्बे परतों वाले आटे को किनारी से पकड़ कर थोड़ा लंम्बा कर लें ताकि लच्छे अच्छे से बनें। • अब एक तरफ से पकड़ कर इसको अच्छे से पूरा गोल कर के लोई बना लें और फिर से हल्के हाथ से थोड़ा सा दबाएं। इसी तरह सारी लोई बना लेंगे।

• सारी लोई को एक कपडे में ढककर 5 – 10 मिनट के लिए रख देंगे । • अब एक लोई पर थोड़ा सा सूखा आटा लगाकर हल्के हाथ से बेलना शुरू करेंगे और गरम तवे पर सेकने के लिए रख देंगे। थोड़ा पक जाने पर पराठा पलट देंगे। •

दोनों तरफ एक – एक छोटी चम्मच घी डाल देंगे और और अच्छे से सेक देंगे। • ढेर सारी परतों के साथ स्वादिष्ट लच्छा पराठा खाने को तैयार हैं, परोस दें aalo jeera or curry ke sath !!!!

Ghee – 3 to 4 Tablespoons

1tbs-kasturi methi

1tbs – Ajwain
